My grandson is gluten and dairy free, my granddaughter is vegan. The first batch I made with Earth Balance instead of butter, eggs and dark chocolate chips, and added 1/4 cup water, as suggested by another reader. My grandson loved them and took some to a pot luck Christmas party and they were a hit. To change this to vegan, I also used Earth Balance, applesauce to replace the eggs and chopped walnuts instead of chocolate chips, and 1/4 cup water. These are a big hit with my vegan granddaughter. Making my third batch today.
Dry but good!
I don't use the gum but add an extra teaspoon of baking powder to compensate. I also put in chocolate chips, walnuts and raisins. The cookies I make are a bit dry...but I like them that way and they taste very good with a hot cup of coffee.
I baked these cookies for only 8-9 minutes. They look soft but do firm up after cooling. I place them with a spatula on a clean tea towel to cool. These cookies are excellent!. I also place peanut butter chips in place of chocolate chips for a different cookie. Yummy !
