  • 2½ cups Robin Hood® Nutri Flour Blend™ Omega-3 & Fibre
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp finely ground instant coffee (optional)
  • ¼ cup butter, melted
  • 1 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 cup unsweetened applesauce
  • 2 tsp vanilla extra
  • ½ cup semi-sweet chocolate chips

  • Preheat oven to 350°F (180°C). Grease and line a 9” x 13” (3 L) baking dish with parchment paper, overlapping 2 sides for easy removal.
  • Combine flour, cocoa powder, baking powder, salt and instant coffee in a medium bowl.
  • Whisk butter, sugar and eggs in a separate medium bowl.  Add applesauce and vanilla. Whisk until incorporated into batter. Stir in flour mixture and chocolate chips. 
  • Spoon batter into prepared pan. Bake in preheated oven 20 to25 minutes. Center should still be soft.  Cool on wire cooling rack.
