Traditional Shortbread

Ingredients:

1/2 cup (125 mL) corn starch
1/2 cup (125 mL) icing sugar
1 cup (250 mL) ROBIN HOOD® All Purpose Flour
3/4 cup (175 mL) butter, softened

Directions:

1. SIFT together corn starch, icing sugar and flour.
2. With large spoon, thoroughly blend in butter. Work with hands until soft, smooth dough forms. If necessary, refrigerate 1 hour or until easy to handle.
3. SHAPE into 1 inch (2.5 cm) balls. Place about 1 1/2" (4 cm) apart on ungreased baking sheet; flatten with lightly floured fork. OR, roll dough to 1/4" (0.5 cm) thickness; cut into shapes with cookie cutters.
4. Decorate with candied cherries, coloured sprinkles or nuts, if desired.
5. BAKE at 300°F (150°C) for 15 to 20 minutes, or until edges are lightly browned. Time will vary with size of cookies.
6. Remove from sheets and cool completely on wire rack.
VARIATION:
7. ORANGE SHORTBREAD: Add 1 tbsp. (15 mL) grated orange rind to flour mixture. Shape into logs or crescents. Decorate wth melted chocolate.

I have been making these cookies since I was a little girl with my mom. They are my family's favorite cookie, as well as co-workers, and I make them several times a year. By adding food coloring or sprinkles, you can make them part of a theme for a holiday. I have passed on the recipe to my children and their families and to co-workers and friends. This recipe is an absolute favorite and will always be a part of my baking. The recipe couldn't be any easier and the cookies turn out every single time:)Enjoy!!!

I used this recipe as an alternative to my normal one and thought they turned out pretty good, but it isn't my favorite one. I might use it again

These cookies are my favorite. I make them for Christmas using holiday cutters and Valentine's Day with heart cutters. For Valentine's Day, I dip half the cookies in semi-sweet chocolate. These are so yummy, everyone in my family enjoys them.
