Banana Bread

Ingredients:

LARGE LOAF (1 1/2 lb/3 cup or 2 lb/4 cup machine)
1 1/2 cups (375 mL) ripe banana, sliced
1/2 cup (125 mL) buttermilk
2 tbsp (30 mL) CRISCO® Canola Oil
2 tbsp (30 mL) honey
2 cups (500 mL) ROBIN HOOD Best For Bread Homestyle White Flour
1 cup (250 mL) ROBIN HOOD Best For Bread Whole Wheat Flour
1 1/4 tsp (6 mL) salt
1 3/4 tsp (9 mL) bread machine yeast

Directions:

1. SELECT loaf size.
2. ADD ingredients to machine according to manufacturer’s directions.
3. SELECT White Cycle and Light Crust setting.

This is my husband's new favourite bread. Makes wonderful breakfast toast. Sandwiches such as peanut butter and/or jam are also excellent. If you are a whole wheat bread lover and have ripe bananas to use, I heartily recommend this. I put 2 TB of lemon juice in the bottom of my measuring cup and then fill up to 1/2 cup mark to make a buttermilk substitute. You just have to let if sit for a couple of minutes. You do have to check the moisture level. Sometimes I have to add a bit more flour. (Of course that's often when I add a bit more banana.) Enjoy!

Trying the recipe with some modifications. First I'm adding 15% cream instead of butter milk, mixing multi-grain flour with wholewheat. Adding some bran and adding dark chocolate that I have crumbled from Bakers chocolate (3 full sqs) as requested by my wife. Just a bit of extra honey. Will let you all know how it turns out.

I baked this up on my old Goldstar and followed the directions with the these exceptions: I substituted the buttermilk for Balkin yogurt, 2 1/2 cups R H Homestyle White Bread flour and 1/2 cup R H Multigrain flour. I replace buttermilk with Balkin yogurt with great success in my recipes. Yes, the loaf was bread-like not traditional "quick bread" but I will try it as French Toast - that sounds really hearty!

it looks really good and i want to make i asap. i can not make it tonight because my mom said i can do you have any thing that coould help me to get her to let me bake it tonight .
