1. Preheat oven to 350ºF (180ºC). Line cookie sheets with parchment paper.Topping:2. Combine sugar and cinnamon for topping.Cookies:3. Beat shortening, butter and sugars until creamy. Beat in eggs, one at a time. Add next 6 ingredients, mixing until incorporated. Stir in chocolate chips.4. Roll in 1” (2.5 cm) balls, don’t flatten. Roll into cinnamon and sugar topping. Place on prepared cookie sheets, about 2” (5 cm) apart.5. Bake 8-10 minutes. Cookies should still be soft in centre. Let cool on baking sheet for 3-5 minutes. Remove, cool on wire rack.Note:6. Cookies can be frozen raw and stored in an airtight bag or container. If baking from frozen, add 5 minutes to baking time.Quick Tips and Tricks:7. Loved the idea of mayan chocolate cookies, I love the combination of spice and chocolate. unfortunately when I made them, everyone told me they are missing something. they taste ok but you feel they are incomplete. I had to try different things and recipes till I came up with my own.
I tried backing off on the cinnamon - reduced to 1 tsp - and the reviews went from "so so - too much cinnamon" to "wow - these are fantastic!". These have now become part of Christmas tradition.
These cookies are just delicious!! Baked 2 trays and froze the rest of the dough balls. This is a keeper, one of the best cookie recipe for sure.
I bake a lot of cookies and this has to be one of the best! I made a batch and froze the dough balls. Baked right from the freezer for an extra 5 minutes - heaven!
Easy to make, lovely rich looking dough. Next time I'll add another pinch of cayenne pepper. They end up looking exactly like the photo.
