CAKE:1 3/4 cups (425 mL) ROBIN HOOD® All Purpose Unbleached Flour1 tbsp (15 mL) baking powder1/2 tsp (2 mL) salt3/4 cup (175 mL) sugar1/4 cup (50 mL) butter, softened1 (1) egg1 tsp (5 mL) vanilla3/4 cup (175 mL) milk1 1/2 cups (375 mL) fresh or frozen blueberries, thawed and drained2 tbsp (30 mL) sugarSTREUSEL TOPPING:1/2 cup (125 mL) ROBIN HOOD® All Purpose Flour1/4 cup (50 mL) brown sugar, lightly packed1/4 cup (50 mL) butter, softened
CAKE:1. COMBINE flour, baking powder and salt; stir well to blend.2. CREAM sugar, butter, egg and vanilla together thoroughly. Add milk, blending well.3. ADD dry ingredients all at once to creamed mixture. Stir just until all ingredients are moistened.4. SPREAD half of batter in greased 9" (2.5 L) square cake pan. Spoon blueberries over batter. Sprinkle with 2 tbsp (30 mL) sugar. Spread remaining batter over blueberries.TOPPING:5. COMBINE all ingredients for topping until mixture is mealy.6. SPRINKLE topping evenly over batter.7. BAKE at 375ºF (190ºC) for 35-40 minutes. Serve warm.
I had made this cake with blueberries last week it was absolutely delish and even better after 3-4 days. Today I made this same recipe with canned pineapple tidbits and it was also delish. This recipe is a keeper! Thanks Robin Hood!
I make this simple cake for kids, adults and even special occasions. It's tastes fresh and people rave about it. It is a cottage favourite in the morning with coffee!
When I make it I substitute Golden Crisco shortening for the butter in the batter and use unsalted Becel margarine for the topping. I make this coffee cake when ever I am asked to bring a desert because it never fails and everyone loves it.
Tastes good but very light
