Zesty Lime Cookies

Ingredients:

Cookies
¾ cup (300mL) Crisco® All Vegetable Shortening
1 cup (250mL) granulated sugar
1 tbsp (15mL) lime zest
¼ cup (50mL) lime juice
2 cups (500mL) Robin Hood® All Purpose Flour
½ tsp (2mL) baking powder
¼ tsp (1mL) salt
Glaze
1 cup (250mL) icing sugar
3 tbsp (45mL) lime juice
2-3 drops green food colouring (optional)

Directions:

1. Preheat oven to 350ºF (180ºC). Grease or line baking sheets with parchment paper.
2. Beat shortening and sugar until well combined. Add zest and lime juice. Beat well. Add remaining dry ingredients and mix until dough comes together.
3. Roll 2 tbsp (30mL) dough on a lightly floured surface to form a 4” (10cm) log. Curl into a ring and gently press ends together. Your cookie will look like a small donut. Place on prepared baking sheets.
4. Bake in preheated oven 15-17 minutes or until lightly golden around the edges. Cool on baking sheets for 5 minutes. Transfer to wire rack to finish cooling.
5. Glaze: combine ingredients for glaze. Drizzle over the cookies to create a zigzag pattern and wait for the glaze to set.

Note:

1. You can roll out the dough on a lightly floured surface and use cookie cutter to cut out desired shapes. Your baking time should be 10-12 minutes.
2. Divide the dough in half. Add a few drops of green food colouring to one half of the dough. Take 1 tbsp (15mL) of the green dough and 1 tbsp (15mL) of the uncoloured dough. Roll each into 4” (10cm) logs and twist together. Your baking time will be 15-17 minutes.

Love the refreshing lime flavour! It reminds me of key lime pie...Mmmm!

I took them to work for St. Patrick's Day and everyone loved the taste. However, my glaze didn't turn out like the picture. I think you would have to add more than 3 drops of food colouring to get that strong green colour.
