Apple Cinnamon Loonie Pancakes
With delicious apple and cinnamon, you can bank on these great-tasting mini pancakes being a favourite with your kids at the breakfast table.
|1 1/4 cups||300 mL milk|
|1/4 cup||50 mL Crisco® Canola Oil|
|1 1/3 cups||325 mL Robin Hood® Original All Purpose Flour|
|2 tbsp||30 mL granulated sugar|
|1 tbsp||15 mL baking powder|
|1/2 tsp||2 mL salt|
|1/2 tsp||2 mL cinnamon|
|Butter for frying|
- Combine milk, egg, oil, and apple in medium sized bowl. Add remaining ingredients and mix until incorporated.
- Lightly grease a 10" (25 cm) frying pan and warm over medium high heat. Drop batter by tablespoonfuls (15mL) into hot pan.
- Cook until bubbly and puffy. Turn and cook other side. Serve hot with maple syrup.
Get your children used to a whisk by having them whisk together the milk, egg, oil and apple. Show them how the ingredients come together, which is called emulsification. Have them use a spoon to stir in the other ingredients so they won’t get caught in the whisk.
What other shapes can be made with the batter? Let your kids use their imagination and tell you what they’d like to see in the pan. Using a squeeze bottle to pour the batter is an easy way to make fun pancake shapes. Try starting with their initials!
Let your kids tell you when it’s time to flip the pancakes over. When the tops are no longer wet and shiny and bubbles start to form, it’s time to flip!
