Lemon Blueberry Slices

This delightful cake is bursting with the flavourful combination of blueberries, lemon and sweet almond. It’s simply delicious!

Ingredients

1 cup 250 mL Smucker’s® Pure Blueberry Jam
2 tbsp 45 mL lemon juice
1 ½ cups 375 mL Robin Hood® Original All Purpose Flour
¾ cup 175 mL granulated sugar
¾ cup 175 mL butter
1 tbsp 15 mL lemon zest
1 cup 250 mL sliced almonds, toasted

Directions

  1. Preheat oven to 350ºF (180ºC). Grease or line a 9”x9” (2.5L) baking dish with parchment paper.
  2. Stir jam and lemon juice together in small bowl. Reserve.
  3. Combine flour, sugar and zest in a food processor. Cut in butter until mixture resembles coarse meal. Press 2 cups (500mL) of mixture on bottom of prepared pan. Sprinkle ½ cup (125mL) toasted almonds over mixture.
  4. Pour reserved jam mixture over base. Sprinkle remaining nuts over jam. Crumble remaining pastry crumbles on top.
  5. Bake in preheated oven for 60 minutes or until topping is golden. Cool and cut into slices.

Tips

  • Use whatever flavour of Smucker’s jam that you have.
