Granola and Yogurt Parfait

This recipe combines the goodness of granola and yogurt to make for one delicious dessert. It’s also packed with almonds, coconut, seeds and raisins.

Ingredients

Granola

4 cups 1 L Robin Hood® Oats
1 cup 250 mL sliced almonds
1 cup 250 mL natural bran
1 cup 250 mL flaked coconut
1/2 cup 125 mL sesame seeds
1/2 cup 125 mL pumpkin seeds
1/2 cup 125 mL sunflower seeds
1/2 cup 125 mL Crisco® Canola or Vegetable Oil
1/2 cup 125 mL honey
1 cup 250 mL natural raisins

Orange Yogurt

1 cup 250 mL plain yogurt
1 cup 250 mL Smucker’s® Pure Orange Marmalade
1/4 cup 50 mL packed brown sugar
1/2 tsp 2 mL cinnamon
1 pinch nutmeg

Directions

  1. Preheat oven to 350ºF (180ºC). Grease or line 2 baking sheets with parchment paper.
  2. Granola:  Combine oats, almonds, bran, coconut, sesame seeds, pumpkin seeds and sunflower seeds in a large bowl. Add oil and honey and combine thoroughly.
  3. Spread granola on prepared baking sheets.
  4. Yogurt

  5. Stir all ingredients together in a medium bowl. Refrigerate until serving.
  6. Assembly: Layer the yogurt and granola in a glass or bowl. Store extra granola in an airtight container for up to 3 weeks or freeze for up to 3 months.

Tips

  • This is delicious with any flavor of jam.
  • Use the granola as a topping for muffins or a fruit crisp.
