Liven up your dessert table with this amazing banana cake. Your kids will love the delicious chocolate chips and creamy icing.

Ingredients

Cake

2 2/3 cups 650 mL Robin Hood® Original All Purpose Flour
1 tbsp 15 mL baking powder
1 1/2 tsp 7 mL baking soda
1/2 tsp 2 mL salt
1 cup 250 mL butter, softened
1 1/4 cups 300 mL granulated sugar
3 eggs
1 1/2 cups 375 mL mashed banana
1 cup 250 mL buttermilk
3/4 cup 175 mL mini semi-sweet chocolate chips

Icing

1/2 cup 125 mL butter, softened
1/3 cup 75 mL mashed bananas
3 cups 750 mL icing sugar, sifted

Directions

  1. Preheat oven to 350°F (180°C). Grease a 13” x 9” (3 L) baking dish.
  2. Cake: Combine flour, baking powder, baking soda, and salt in a large mixing bowl. Cream butter and sugar in a separate large mixing bowl until light and fluffy in texture. Add eggs, one at a time, beating thoroughly after each. Add banana. Mix well. Add flour mixture to egg mixture, alternating with buttermilk, mixing lightly after each. Stir in chocolate chips. Spread batter evenly in prepared baking dish.
  3. Bake in preheated oven 40 to 45 minutes, or until toothpick inserted comes out clean. Cool in pan on wire rack.
  4. Icing: Beat all ingredients together in a small mixing bowl until smooth. Spread on cake.
