Krispie Oatmeal Cookies

Looking for a sweet snack with a satisfying crunch? These oatmeal cookies with crisp rice cereal are sure to hit the spot!

Ingredients

1/2 cup 125 mL butter, softened
1/2 cup 125 mL packed brown sugar
1/2 cup 125 mL granulated sugar
1 egg
1 tsp 5 mL vanilla extract
1 cup 250 mL Robin Hood® Original All Purpose Flour
1 cup 250 mL Robin Hood Oats
1/2 tsp 2 mL baking soda
1 cup 250 mL crisp rice cereal

Directions

  1. Preheat oven to 350ºF (180ºC). Line baking sheets with parchment paper.
  2. Cream butter and sugars together in large mixing bowl using electric mixer. Add egg and vanilla extract; mix well.
  3. Combine the remaining ingredients in a medium bowl. Add to creamed mixture and mix with spoon until blended. Drop by spoonfuls onto greased baking sheet.
  4. Bake in centre of oven for 10 to 12 minutes, or until light golden. Cool 10 minutes, then transfer to racks and cool completely.

Tips

  • Add 1 cup (250 mL) chocolate chips, raisins, chopped nuts or dried cranberries to dough.
