Apple Blueberry Muffins

1 ½ cups 375mL plain yogurt
½ cup 125mL STEVIA IN THE RAW® Sweetener Baker’s Bag
½ cup 125mL sugar
2 eggs
1/3 cup 75mL Crisco® Canola or Vegetable Oil
1 large apple, peeled and finely chopped
2 ¼ cups 550mL Robin Hood® Original All Purpose Flour
1 tsp 5mL baking soda
1 tsp 5mL cinnamon
1 cup 250mL blueberries


  1. Preheat oven to 375°F (190°C). Line 12 muffin pans with liners.
  2. Combine first 7 ingredients in large bowl. Add remaining ingredients and mixed just until combined. Spoon batter into prepared muffin pan. Bake 20-25 minutes, or until a toothpick inserted in centre of muffin comes out clean.
