Berry lovers, the anticipation is over! This fruit flan combines all of your favourite fruits – strawberries, kiwi, raspberries, blueberries, grapes and peaches – with a light textured and fluffy flan.



1 1/4 cups 300 mL Robin Hood® Best For Cake & Pastry Flour
2 tbsp 30 mL sifted icing sugar
1/2 cup 125 mL butter, softened


1 pkg 8 oz/250 g cream cheese, softened
1/2 cup 125 mL sifted icing sugar
1 tsp 5 mL vanilla extract
1/2 cup 125 mL whipping cream
3 cups 750 mL fruit

Glaze (Optional)

1/2 cup 125 mL Smucker’s® Pure Apricot Jam
1 tbsp 15 mL lemon juice


  1. Preheat oven to 425°F (220°C).
  2. Pastry: Combine flour and icing sugar in small mixing bowl.
  3. Cream butter in large bowl and gradually blend in flour mixture until smooth.
  4. Press evenly on bottom and sides of 9" (23 cm) flan pan; prick well with fork and chill 15 minutes.
  5. Bake in preheated oven for 7 to 10 minutes or until light golden. Cool thoroughly.
  6. Filling: Beat cream cheese, icing, sugar and vanilla together until smooth in a large bowl of an electric mixer.
  7. Whip cream until stiff and fold into cheese mixture. Spread evenly in baked crust.
  8. Cover with fruit.
  9. Serve immediately, or if desired melt jam and lemon juice together until smooth and brush over fruit.
  10. Serve flan at room temperature from maximum flavour.
