Here are some tips that will help your muffins turn out marvelous and make quick breads a breeze.

Choosing Flour

Choosing Flour
Unlike yeast breads, which benefit from heartier flour, quick breads and muffins bake up great with Robin Hood® Original All Purpose flour. Or you can try Robin Hood® Nutri Flour Blend® products, like Tastes Like White or Omega-3 & Fibre. For a gluten free option, try Robin Hood Gluten Gluten Free All Purpose Flour Blend.

Preventing Dense Crumbs

Mix your batter as little and lightly as possible. Lumps are just fine, as they will break up during baking. It’s important not to over-mix, as this will toughen your muffins and cause tunneling (holes).

Filling Muffin Cups

Only fill your muffin cups 2/3 of the way. This will give them space to rise. If you have one, use a wire release ice cream scoop. It will help you portion the batter evenly and give your muffins a rounded top.

Troubleshooting

An oven that isn’t hot enough can cause your muffins to have either a flat top or one with just a small peak in the centre. Next time, try increasing your oven temperature.

If your muffins have a cracked, uneven top, your oven temperature may be too high. Try turning it down.

From Muffin to Quick Bread Loaf and Back Again
Virtually any muffin can be made as a loaf, and vice versa. You’ll just need to adjust the cooking time. Generally, loafs will take 40+ minutes while muffins are ready in 15+. Of course, the time will depend on the density of your muffin or loaf so be sure to check it regularly for signs of doneness.

Your muffins and quick breads are done when a toothpick inserted in the centre comes out clean.
